Greek Chicken Salad Recipe

For Salad;

1 skinless/boneless chicken breasts
1 tsp olive oil 
1/4 cup feta cheese 
1 cup tomatoes, sliced 
2 cup mix green lettuce
1/4 cup black olives 
1/4 cup green bell pepper
1/8 cup red onion

Greek Vinaigrette dressing;

1 tbsp. olive oil
1 tbsp peanut oil
1 tbsp red grape vinegar
1 tbsp White vinegar
1 tsp. sugar (more to taste)
1 tbsp. lemon juice
1/8 c. dried parsley
Salt & pepper to taste

Combine all ingredients for dressing in blender, blend properly and keep aside.

Cut your boneless skinless chicken breasts into strips or cubes and marinate them with salt and pepper. Sprinkle basil or any additional spices you would like in your marinade.  

Heat a large nonstick pan on med-high. Add 1 tsp. of olive oil to the pan. Drop in the chicken and let cook for about 5 minutes on one side. Turn the chicken over and let cook on the other side for about 5-7 minutes or until completely cooked.

Place lettuce on a plate, sprinkle tomato, green pepper onion and olive.

Place the cooked chicken pieces and finally the feta cheese

Serve with the dressing separately on the side.
